Homemade Samoas

Before Cooling

1 Stick Butter
1/4 Cup Sugar
1 Cup Flour
1/8 TS BPowder
Salt, a pinch
1 TB Milk

2 Cups Coconut

15 Caramels
3 TB Milk

1 package Dark Chocolate chips


Set the oven to 350 Degrees. Bake the coconut on a sheet until browned about 8 minutes. Shake and mix flakes after 4 minutes.

Make the cookie dough with the butter, sugar, flour, baking powder salt, milk and vanilla [top ingredients]. Roll out dough and then place in freezer for 15 minutes. Cut into circles with holes in the middle and then bake cookies for 10 minutes.


Take out cookies before they are too browned. Let cool. Set aside. Make the caramel by melting the milk and caramels in a double boiler.


Coat each cookie with a layer of plain caramel. Then mix in the roasted coconut with the remaining caramel.

ToppingThen top each cookie with a heaping of the coconut/caramel mixture.

Coconut CaramelMelt the dark chocolate in a double boiler and dip the bottoms of the cookies in the chocolate and then drizzle some on top. Let harden for 1-2 hours in the fridge before eating.
