Dandelion Greens

I bought some Dandelion Greens at the store last week and kind of didn’t know what to do with them. They come in a large bundle which seems like a lot, but they actually don’t stretch that far. I did some research and found that they are extremely bitter. So I did some things to break up the intensity and bring out the flavor.


First clean and cut the stems off the greens. I divided the bundle in half. Half going to the salad and half to the pesto.

1/2 Cup Sliced Mushrooms

1 TB Olive Oil



Dandelion Pesto

Dandelion Greens Pesto

1 Cup Dandelion Greens

1 Clove Garlic

4 TB to 1/4 Cup Olive Oil

1/4 Cup Parmesan Cheese
