3 Yellow Yukon Potatos, sliced thin
1/2 onion, sliced thin
Saute onion in olive oil. Bake the potato slices in the microwave in batches for two minutes at a time to slightly pre-bake. Whisk the eggs together in a bowl and set aside.
Layer the potato in a circular greased baking dish. Add the onions in between layers and then pour egg over.
Bake for 40 minutes at 400 degrees until egg is solid and the potatoes are soft. Take out of oven and top the dish with cheese. Slice into pieces and serve.
