Baked Avocado Eggrolls

Avocado Rolls

3 Avocados, cubed
Handful of Sun dried Tomato, chopped
2 TB chopped Onion
2 TB chopped cilantro
Salt, Pepper
9 Egg Roll Wrappers
Olive Oil

FillingMake the filling by mixing the avocados, onion, sun dried tomato, and cilantro in a bowl. Spread out on a eggroll wrapper on a diagonal.

DiagonalWrap according to instructions and then lightly brush each roll with olive oil. Bake at 400 degrees for 10 minutes. Slice in half and serve.
