Chili Sin Carne

Veggie Chili

Veggies:

1 Onion, chopped
2 large cloves Garlic, minced
2 Cups Mushrooms, halved
1/2 Zucchini, cut into half moons
1 can Sweet Corn, rinsed
1 Red Pepper, chopped

Base:

1 Can White Beans
1 Can of Kidney Beans
1 Can of Crushed Tomato
2 TB Tomato Paste
1 Cup Veggie Stock
1 Green Chili, minced

Spices:

Paprika
Salt
White Pepper
Chili Powder
and African Smoke [from Trader Joes]

Veggies

Saute the onions and mushroom until tender. Add the rest of the veggies and cook through for 5 minutes. Add the base ingredients and mix until smooth. Season with the spices and bring to a boil.

SpicesReduce and let simmer for an hour. It tastes the best later in the day.
