Red Pepper Alfredo

Roasted Pepper2 Red Peppers, roasted for 30 minutes in oven set at 375 degrees

2 cloves Garlic

1/2 Onion, minced

1 small tube of herb Goat Cheese

1/2 Cup Almond Milk

1 TB Olive Oil

1 Box Linguine Pasta

I saw this on pinterest and had to make it. Start by sauteing the onions and garlic in olive oil.

Roasted SauceMix the roasted peppers in with the goat cheese and cook until melted.

Then slowly start to add almond milk in increments, letting it reduce, until you have the desired thickness. Pour over pasta and serve with basil.
