Goat Cheese and Butternut Squash Ravioli

Butternut Squash and Goat Cheese Ravioli24 Wonton Wrappers [to make 12 ravioli]

1 medium sized Butternut Squash

1/4 Cup Goat Cheese

Olive Oil

Salt

Water

Roasted ButternutFirst roast the butternut squash. 375 degrees for 20-30 minutes. Take out when it starts to brown.

Scoop out the squash and set aside in a bowl.

Prep the WontonsPrep the wontons by setting them side by side and making a small bowl of water to seal the edges.

FillingFill with no more than a tablespoon of the squash and goat cheese. Paint the edges with water and then place the other wonton on top, sealing the edges securely.

Makin PastaFinally, boil softly for two minutes, in batches of 4-6 at a time.

Take out of the water, blot with a paper towel and then serve with olive oil and salt.
