Based on the version at Henry’s Tavern in Portland, OR. Of course they use waffle fries instead of wedges. But since this is homemade I’ve just used what I can make at home. Gorgonzola is definitely a stinky cheese. Don’t try this if you can’t stand the flavor. It’s not for everyone.
Gorgonzola Cheese Sauce:
2 TB Butter
1/2 Cup Cream
1/2 Cup Almond Milk
1 Cup of Gorgonzola Cheese crumbles [mine was blue, so that’s why the tint of the sauce it green]
Add the cream and reduce.
Then add the almond milk and cook for 2-3 minutes until it thickens. Add the cheese and mix continuously to melt. Add a sprinkle of sage and cayenne pepper and pour immediately over fries.
