Broccoli Cheddar Soup

2 cups of chopped Broccoli

1 Carrot, diced

1/2 Onion, minced

1 TB Flour

1 Cup Half & Half

2 Cups Veggie Stock

1 Cup shredded Cheddar Cheese

Salt, Pepper

Cut up the broccoli and carrot into small pieces.

Make the soup base by sauteing the onion in a tab of butter. Once softened, add the flour and whisk until a smooth texture. Add the half and half and veggie stock and bring to a boil. Season. Add the broccoli and carrot and simmer for 20 minutes.

After the 20 minutes, add the cheese and stir until melted and smooth.
