4 Links Vegan Sauage
1 Red Pepper, cut into huge chunks
1 Onion, sliced into large sections
1 Fennel Blub, sliced
1/2 Carton Mushrooms, cut in half
Red Wine, 1/2 Cup – 1 Cup
Saute the onions, mushrooms and peppers first in olive oil. Season liberally. Once softened, add the fennel and sausage. Cook for a bit and then add the red wine. Cover and simmer for 15 minutes. Then uncover and let the liquid cook off, for whatever amount of time it takes. Serve plain or with rice, bread or noodles.
