For 5$ at whole foods you can get a vegan “roast” made of veggies and wheat gluten and sort of shaped like a piece of roast. Might I add, it also tastes delicious. And that’s kind of what matters.
In a pot saute up some veggies: carrot, onion, celery, mushroom, potato, and red pepper add the vegan roast and some wine and let simmer for 45 minutes until everything is cooked through.
I also added some thyme, sage, salt and pepper.
