Tortilla Soup

This easy soup is made of few ingredients.

I large can of Diced Tomato

Olive Oil

Tortilla, sliced thin

1/2 Onion, chopped

1-2 Garlic Cloves, chopped

Cumin, Chili Powder, Cayenne Pepper

1-2 Cup Veggie Broth

for garnish: sour cream, green onion, cheese

Slide up your tortilla with a pizza cutter into small strips. Bake in the oven at 350 degrees for 10 minutes until crispy.

In a large pot, saute onions and garlic and then add the diced tomatoes. Season with cumin, chili powder and cayenne [for as much heat as you like, I like it spicy]. Bring to a boil and add 1 cup of veggie stock. Let simmer for 10-15 minutes. Serve with garnish and homemade tortilla strips.
