Thai Squid Salad


1 cup Squid, cooked [I couldn’t find plain squid at any of the groceries I shop at, so I used a seafood medley made up of mostly squid – worked just fine]

1/2 Onion, sliced thin

1 Carrot, shredded

1 handful of Cilantro

1/4 Cup Fish Sauce

juice of 1 Lime

4-6 leaves Mint

1 TB Sugar

In a bowl mix the fish sauce, sugar, lime and onion and carrots. Let marinate.

Cook the squid and let cool down. This is a cold salad.

Layer your salad bowl with the lettuce, squid, onion and carrot dressing, and then some mint and cilantro.
