Corn & Pepper Taquitos

A great late night snack is always mexican food. These quick taquitos are great because they are baked and vegetarian!

You can literally whip these up in 15 minutes.

4-6 Flour Tortillas

1 Cup Corn

Chopped Red Pepper

Chopped Onion

1/4 Cup Cream Cheese

1/4 Cup Cheddar Cheese, shredded

Saute/heat up corn, peppers, and chopped up onion. Add the cream cheese and mix. Sprinkle in some cheddar cheese and let melt.  Fill each flour tortilla with a line of the filling, roll up and bake for 12 minutes at 350 degrees. Make sure to spray with cooking spray or paint with olive oil on top.
