1 Beet, roasted


Goat Cheese

Salt, Pepper

Roast beet for 1 hour and then puree in a food processor.

Make pasta according to box. I used maybe 1/3 box for two portions.

Make the sauce by taking the pureed beets and heating them through in a saucepan in a bit of olive oil. Add any seasonings you like… and then add spoonfuls of the pasta water a bit at a time to thin it down.

Then add in the cooked, drained pasta and mix. Top with goat cheese and serve.

This is probably on my top 10 favorite foods list now. I found the recipe on FoodGawker and simplified it, also leaving out the walnuts.
