Tomato Paella

2 Cups Rice

2-4 Cups Stock

1 Heirloom Tomato

Seasonings: Salt, Pepper, Paprika, Oregano, etc

1/2 Onion, chopped

1-2 Garlic cloves

2 Tablespoons Tomato Paste

Olive Oil

Slice up your heirloom and let in marinate in seasonings and olive oil.

Chop up onions and garlic and saute in a cast iron skillet. Add a couple tablespoons of tomato paste and mix through, cooking for a couple minutes. Add stock and rice. Bring to a boil. Take off the heat and layer the heirloom tomato slices on top.

Bake in a preheated 400 degree oven for at least 20 minutes, until the liquid has reduced and the tomatoes are roasted. Make sure the rice is tender and cooked before taking out.
