Mussels in Butter Thyme Sauce

Mussels are delicious. Seriously. You don’t need to do much. Just steam them in a sauce and they open up, absorbing all the flavor.

Clean, Strain and set aside the mussels. Mine came pretty clean so I only had to rinse them thoroughly.

In a saucepan, melt a hearty spoonful of butter and brown some onions. Add wine, reduce and then sprinkle in some thyme. Add the mussels and cover, steaming for 8 minutes. Add more butter if you need it.

After 8 minutes, the shells will open up. Serve in sauce and eat out mussels with a fork or your fingers.
