Pappardelle Mushroom Pasta

I know, I know. I’ve made like 12 other variations of this. But I can never turn down a chance to make mushrooms and pasta.

This time I sauteed the mushrooms with orange peppers, garlic and olive oil. I reduced the sauce with half & half, goat cheese and veggie stock. I then garnished with green onion and seasoned with salt and pepper.

What makes this variation nice is the Pappardelle noodles, a wide flat egg noodle.
