1/4 cup red onion
1 small garlic clove
1 peeled mango
Heat a small sauce pan over medium-low heat. Add in:
1 tbsp olive oil
and then add in the onions. Cook for a few minutes then add in the mango and garlic. Also add:
1/4 tsp red pepper flakes,
1-2 tbsp sugar (depending on how sweet you like it)
1/2 tsp coriander
salt and pepper to taste
Reduce temperature and simmer for about 10 minutes until the mango has softened.
Let cool for a few minutes, then blend in a food processor.
2 oz of goat cheese (about 1/2 a log)
and stir until mixed completely.
Put on crackers or sandwiches. The sandwich above has grilled chicken and roasted red pepper on whole wheat bread.
