Vegetarian Enchiladas

6 Tortillas

1/2 carton Mushrooms

1 package Seitan

Garlic, minced

1/2 can Black Beans

1/2 Onion, chopped

1/2 Red Pepper, chopped

Taco Sauce, Chili Sauce, any kind of red sauce

Cheese, shredded

To make the filling, saute the mushrooms, beans, seitan, onion, garlic and red pepper for 10 minutes on med-high heat. Cool.

In a baking dish, pour some red sauce down until the bottom is coated.

Fill tortillas cigar style and top with cheese before rolling shut. Place each tortia seam side down in the dish, stuffing 6 in tightly. Cover with red sauce and bake for 30 minutes at 350 degrees.
