1 Package of Tempeh Bacon
handful of Mint
2 cloves Garlic
1/4 Cup Olive Oil
Lime Juice, Zest of 1 lime
To make the sauce, chop up the mint and garlic.
Mix the olive oil, lime and zest in a bowl and add the mint and garlic. Set aside.
Slice the zucchini and squash lengthwise on a mandoline. Alternate on skewers, adding tempeh bacon as well. Grill for 2 minutes a side. Drizzle on sauce and serve.
