I came up with this dairy free recipe because I really hate mayonnaise. So here it is:
3 medium Yellow Potatoes, cooked
1/2 Red Onion, chopped
4 Pieces of Bacon, cut into small pieces
4 TB Olive Oil
4 TB Spicy Dijon Mustard
Slice the potatoes in to 1/4 inch thick chips, leaving the skin on.
Cook the potatoes until soft and flaky.
In a pan set on med high heat, saute the bacon and onion until crunchy and soft, respectively.
In a bowl, whisk together the olive oil and dijon until emulsified.
Let the potatoes cool down and then mix in the bacon and onion mixture. Pour in the olive oil and dijon and mix through.
Cool in the fridge for at least two hours.
Garnish with chives and salt. Serve.
