Russian Pancakes

A pancake is a pancake. But if want to try a slight variation – change the ratio of flour to cheese. There are many types of Russian pancakes and these are not blintz or oladi – which are the most popular. This is a hybrid between an american pancake and a blintz. I’ll have to make blintz in the future.

1 Cup soft Cheese, I used soft Goat cheese [the recipe called for Farmer’s Cheese]

2 Eggs

1/4 Cup Flour

a splash of Vanilla

1/2 Ts Baking Soda

1/8 Ts Salt

1 TB sugar, I used agave

Mix everything in a bowl with a fork. The fork helps break down the cheese.

Heat a skillet with oil.

Because of the cheese ratio – they will brown quickly so keep an eye on them. The smaller the size of the pancake the better.

Serve with sour cream, jam or honey.
