Southwestern Eggrolls

What you’ll need:

Egg roll Wrappers

1 Cup Black Beans

1 Cup Corn

1/2 Red Pepper, chopped

Taco Seasoning: Paprika, Chili Powder, Salt and Pepper

1 small Onion, chopped

Olive Oil or cooking spray

2/3 cup Cheddar Cheese

Green Onion, chopped

For Avocado Dip:

1 Avocado

Lime Juice

1 Cup Sour Cream

Make a mix of chopped peppers, corn, black bean and onion. Saute in a pan on the stove and season with taco seasoning. Take off the heat and cool.

Lay out your egg roll wrappers. I made 8 rolls out of a medium sized bowl of filling. Fill with the heated bean mixture and add the cheese and green onion as well. Wrap.

Look on the egg roll wrapper of how to roll them. They are different depending on the brand. After stuffing each wrapper with filling, spray with cooking spray and bake a sheet of them at 400 degrees for 10 minutes.

To make your dip. Smash up an avocado and add about a cup of sour cream and juice of 1/2 lime. Season with salt and mix up until smooth.
