1/2 Red Pepper, sliced very thin
Handful of chopped Scallions
1/4 Cup Ricotta Cheese
Saute the red peppers, scallion, and thyme in some butter until heated through but still crunchy.
Spread the ricotta cheese on top of pieces of toast and then top with the peppers.
Drizzle some honey over top and eat warm.
I ate this as a meal, but if you want to serve it for an appetizer just use smaller bread pieces and serve that way.
