Mushroom Dinner Crepes

For a light simple dinner make savory crepes and fill with sauted mushroom.

Crepe:

2 Eggs

3/4 Cup Soy Milk

1/2 Cup Water

3 Tablespoons Melted Butter, plus more for cooking

1 Cup of Flour

Filling:

Mushrooms, 1 carton

2-3 Green Onion, chopped

Wine, 2-3 tablespoons

Cheese, to taste

Mix all the crepe ingredients together and let sit for an hour. After an hour, heat a non-stick or crepe pan and melt some butter. Pour a 1/3 cup of the batter in and coat the entire surface as thin as possible. Cook until each side has lightly browned and flip. This recipe should yield 8 crepes.

To make the filling saute mushrooms in wine and top with green onions and cheese at the end. Fill crepe with mixture and fold both sides over.
