Tiny Lime Cakes

These little treats were fun to make. They can be topped with icing, sprinkles or fruit.

1 1/2 Cups Flour

1 ts Baking Powder

1/2 ts Salt

1/2 Cup Butter

1 Cup Sugar

2 Eggs

3 T Lime Juice

1 TB Lime Zest

1/4 Ts Lime Food Coloring

1/2 Cup Soy Milk

Preheat oven to 350 degrees.

Mix everything together into a batter.

My favorite part was finding the right lime color:

Bake for 20 minutes until a toothpick comes out clean.
