Mushroom and Cheese Strata

After seeing Sarah Jessica Parker spill it all over herself in The Family Stone, I always wondered what strata was. Simply a breakfast bread pudding – it’s awesome because you can add anything you like! The one helpful tip for this is to make it the night before and let sit in the fridge overnight. I wanted it today, so I didn’t wait to do all that and it still turned out okay.

Whisk 5 eggs in a bowl. Season with salt, pepper and dijon mustard. Chop up some green onion and throw that in too.

In a baking dish, lay down a layer of bread crumbs/pieces. Nothing too big or small. Then add the cooked mushrooms and cheese. Wait until the mushroom and cheese has cooled because you don’t want to pre-scramble the eggs.

Pour the egg mixture over the bread and mushroom and let sit for at least an hour, preferably overnight. You want the bread to absorb the egg.

Bake in the oven for 45 minutes at 350 degrees.
