Roasted Beets and Celery Root

Cut up a celery root by cleaning, peeling and cutting it into thick 2 1/2″ pieces.

Then roast some golden beets alone until tender. Douse in olive oil, heat the oven to 350 and cook for twenty minutes.

Then combine the two and saute in olive oil until cooked through. Season with salt and pepper. Top with goat cheese.
