Quick, robust, and versatile; grilled veggies is one of my favorites. This spiced rub is an excellent flavor addition.
First get ready about 2-3 lbs of mixed veggies, cut into large, grill-able pieces.
Next, prepare the rub by mixing together:
1/2 tsp salt
1/4 tsp white pepper
1/4 tsp cayenne pepper
2 1/2 tbsp cumin
3 tbsp coriander
4-5 large cloves garlic, finely chopped
Coat the vegetables with olive oil, then rub on the spiced mixture.
Grill until soft, and serve anyway you like.
