Otherwise known as Easter to most, this Sunday Spring Meal was an excuse to cook, cook, cook. For I can never turn down an opportunity to make a nice meal. The logic with this was to try new things, to stay healthy and celebrate spring. The green bean salad was probably the biggest hit. For dessert I made a Salted Caramel Pie. The fish was simply roasted with mushrooms and lemon juice and by no means the main component. You could even eliminate it if you wanted to stay vegetarian.
