1 Carrot, matchstick cut
1 Celery, matchstick cut
1 Onion, chopped
1 Garlic Clove, minced
15 oz Crushed Tomato
2 Cups [ish] Veggie Stock
1 Package Cheese Tortellini
Shredded Parm, garnish
Saute the onion and garlic first. Then add the other veggies and heat through but keep crunchy.
Add the stock and tomato sauce and bring to a boil.
Once boiling – add the tortellini and cook to package instructions in the sauce. If it thickens too much, add a little more stock to thin.
Take off the heat, garnish with shredded parmesan and serve.
