Braised Turnips

If I have the resolve, I spend my Saturday mornings working on a farm for a great organizations IFFS. Last weekend they had a surplus of  turnips, so I got to take home a few pounds.

After washing really well,
2lbs turnips
Slice into 1/2 in thick slices.
Blanch them in salty water for 1 minute, drain in a colander and rinse with cold water.

Then, in a large skillet cook over medium heat:
4-6 slices of bacon
Cook until crisp then remove from fat.

Next, add in:
1 cup sliced red onion
2 minced garlic cloves.

Cook until onions are soft. Then combine in the skillet:
turnips
1/2 cup chicken stock/broth
1 tbsp brown sugar
sprinkling of salt

Braise the mixture, covered, on medium-low heat for about 15 minutes until turnips are semi-soft, stirring occasionally . Then, remove lid and  cook until liquid evaporates.

Finally, add in just before serving:
the cooked bacon
a few sprigs of chopped cilantro or parsley
juice of one lime
salt and pepper to taste
