Chipotle Caramelized Onions

1-2 TB Olive Oil

2 Cups Onion – 1 Big Onion, Sliced

Chipotle Seasoning – To Taste

1 Tablespoon Brown Sugar

1 Tablespoon Balsamic Vinegar

1/4 Cup Water

Heat the olive oil in a saute pan that has a lid. Add the onions and cook for a moment. Before covering add the chipotle seasoning [or fresh], brown sugar, vinegar and water. Keep another cup of water on hand to periodically add in as needed.

Cover. And let cook on med-low heat for 30-40 minutes. Every 5-10 minutes uncover, add a little water to lift off the flavor caked to the pan and scrape off. I made the mistake of forgeting about them for twenty minutes and had a little more burnt flakes mixed in that I would prefer. Keep an eye on them.

Serve with a burger, mexican food, sandwich, or spice up some veggies.
