There aren’t a lot of recipes out there for purple sweet potatoes. So I decided to make french fries. Considering my oven is still broken [probably from overuse] – I fried them on the stove. Normally I would bake them, but this crunchy goodness was a nice treat.
Clean, peel and matchstick cut potato. One large potato was enough for two people. The skin is super rigid so be prepared to put in some minor work to peel it.
Season with salt. Fry in olive oil in batches.
Serve with ketchup.
