This recipe I found in Radically Simple a great cookbook with lots of healthy variations and simple meals. I think this cold soup is perfect for a hot day.
2 Large Cucumbers
1 1/2 Cups Greek Yogurt
1/2 Cup Coconut Milk, chilled
1/4 Cup Fresh Mint
1 1/2 Teaspoons Cumin
2 Tablespoons Olive Oil
1/3 Cup Finely Minced Red Bell Pepper
Make sure all the ingredients are chilled.
Peel and de-seed the cucumber. In a blender mix the cucumber, coconut milk, and yogurt. Chop up the scallion – separating the dark and light pieces. Add the light scallion pieces, mint, cumin and olive oil to the mixture already in the blender. Pulse until smooth. It will be a runny soup texture – just cold and sort of odd at first, but it grows on you. Chop up the red pepper and garnish with mint, pepper and scallions. Serve cold.
