This is a close reiteration of a Jamie Oliver recipe for a summery stew. I’ve added some mushrooms and used veggie sausage instead.
It’s the kind of thing you can toss all in a pot and let cook for 40 minutes until you eat it. A great quick dinner or weekend lunch.
3-4 Pieces of Sausage. I used this awesome seitan based meat free kind.
2-3 Pieces of Garlic
Cherry Tomatos, handful
1/2 Lemon, cut into quarters
1/2 Onion, cut into pieces
1/4 Cup Wine
Put a little olive oil in a pot on med heat on the stove. Throw in the rest of the ingredients, the wine last. Let come to a small boil and cover, bringing down the heat. Cook for 30 minutes to an hour – whatever it takes for the sauce to thicken and reduce. Scrape off the bottom of the pot halfway through to pull up all the flavorful bits and then recover. Serve with bread, potatoes or eat by itself.
