One of my favorite meals… Spring rolls are very cheap and easy to make.
Rice Paper / “Spring Roll Skin”
Red Pepper, Green Pepper, etc
Cut the veggies into long thin strips. Soften your rice paper by soaking one piece at a time in warm water. I fill a frying pan about the size of the paper and set it on the counter. It takes about 1-2 minutes for the paper to soften. Remove, place on a flat surface.
Then, to wrap the spring roll: Place the veggies in the center of the wrap in a rectangle. Fold the two ends over the short sides of the veggies and then wrap one folded side over, rolling everything at once. Dip in spicy thai chili sauce.
