Beer Cheese Soup

Literally the worst thing for your body, this trifecta of alcohol, cheese and bacon fat is only missing the one other unhealthy thing: sugar. Luckily I opted for Tempeh bacon.

12 oz White Cheddar, shredded

I med onion, chopped

1/2 Potato, chopped

1 garlic clove, chopped

2 TB Flour

1 bottle of Ale, I used Fat Tire

1 Cup Stock

1-2 Cup Half & Half

Cayenne Pepper, pinch

2 TB Sherry

1 TB Thyme

Salt, Pepper

Bacon, tempeh

Saute the onion in a pot. Once it’s softened, add in the potato and garlic. After those are cooked down, add the flour and cook for 2 minutes. Add the beer, stock and half & half. Bring to a boil, and simmer off the alcohol for 3 minutes.

Cook your bacon¬†separately. If you use real bacon you can always cook it first in the pot and use the bacon fat to cook the onions, potatos and garlic. There was no use since I used fakin’ bacon.

Stir in the cayenne pepper and then cool, taking the pot off the burner. After about 10 minutes of cool down stir in the cheese and thyme. Serve immediately.
