Apple Chips with Ricotta Dip

Slice an apple on a mandoline. Toss in sugar and cinnamon to taste. Lay out in one layer on a baking sheet. Bake for 1 1/2 Hours at 200 degrees until all the juices have evaporated.

Tip: Don’t use Wax Paper. The first round I used wax paper and I wasted half an apple because it molded together and had to be thrown out. Grease the baking sheet with cooking oil.

To make the dip: Mix 1/2 cup ricotta with lemon juice, cinnamon, and honey.
