Plum Galettes

The Dough

1 1/4 Cup Flour

1 1/2 Tablespoon Sugar

1/2 Teaspoon Salt


1/2 Cup Butter

2 Tablespoons Ice Water

1 Egg Yolk, beaten

The Plums

1 1/2 Tablespoon Sugar

1 Tablespoon Flour

1/4 Teaspoon Cinnamon

1/4 Teaspoon Nutmeg

1/8 Teaspoon Ginger

Lemon Zest

1/2 Tablespoon Butter, dots

Make the dough out of the ingredients. Mix everything by hand or in a mixer until it forms a dough. Roll out into a disc and wrap in wax paper. Refrigerate for an hour.

While dough is cooling, prepare the plums. Slice plums thin and toss in sugar, flour, cinnamon, nutmeg, ginger and lemon zest.

After an hour take out the dough and roll out thin on flour or sugar [if you want it extra sweet] and cut into 6 or 7 circles. Place the circles on a greased baking sheet.

Place the plum mixture on each circle and press the edges up around it. I made the mistake of skipping this next step so mine didn’t turn out as pretty in appearance.

Place in the freezer for 15 minutes. What this does is set the form, so the dough you’ve pressed into a nice design stays intact while in the hot oven. I didn’t do this, and because of laziness and my edges limped down immediately. I tried to push them up while they were cooking but to no avail.

Take out of the fridge from setting, dot each with butter, and sprinkle with more sugar if you like. I don’t like to add buckets of sugar, but you definitely can.

Bake for 25 minutes at 350 degrees until just brown and the insides are bubbling.
