Faux Crab Stuffed Mushrooms

For a quick yummy meatless appetizer…

12-16 mushrooms

3 Tablespoons Olive Oil

Salt

1/4 Cup Shallot

1/4 Cup Cheese – Goat, Ricotta, etc

2 Tablespoons Parsley

2 Teaspoon Lemon Zest

1/4 Cup Parmesan Cheese

1/4 Cup Panko [bread crumbs, box]

1 Cup Faux Crabmeat

Preheat oven to 350 degrees.

Remove stems from mushrooms. Set aside. In a bowl toss the caps with salt, pepper and the olive oil. Arrange on foil covered baking sheet.

Saute the shallot and chopped up stems until just tender. Don’t cook all the way.

In a bowl mix the cheese, parsley, lemon zest, parmesan, panko and chopped up crab. Add in the heated mushroom stems and shallot last. Spoon out into caps.

Bake for 15 minutes.
