Strawberry & Lemon Bars

These are also known as Freckled Strawberry Lemon Bars.

The crust:

1 Cup Flour

1/2 Cup Butter, soft

dash salt

1/4 Cup Powdered Sugar

1 oz Cream Cheese

2 Tablespoons Flour

1 1/2 Cup Sugar [I used rice syrup, turned out fine]

1/2 Cup Fresh Lemon Juice

The strawberries:

1/2 Cup Strawberries

2 Tablespoons Powdered Sugar

Pulse in a blender to allow a jam like substance to form. Spoon on top of the raw lemon custard.

Bake for another 20-25 minutes until set and cooked through. Cut into squares or triangles. Serve at room temperature.

  1. Lemon bars tend to be my favorite dessert because they taste so yummy plus you could quickly cook them at home when you want to.
