Once a week, I love to make a “baked potato bar” where you can top a baked potato with everything you could ever imagine.
I just recently started oven baking potatoes as opposed to microwaving them, and I love it. The crunchy seasoned skin is worth it.
1. Scrub potatoes, poke holes with a fork, slather with butter or olive oil and sprinkle on some kosher sea salt, rubbing it in.
2. Bake the potatos at 400 degrees for 1 hour. Either on the wire rack directly, with a tray underneath to catch droppings, or on a baking sheet.
3. Take out, poke with fork in a line across the top, push the two ends in and open, steam will emerge. Let cool slightly.
4. Top with fixins’
