Cheesy Quinoa Bites

I had some leftover quinoa from dinner the other night, so instead of tossing it in the trash… I thought I could turn it into something else.

2 Cups Cooked Quinoa [pronounced qin-wah]

1 tablespoon Parsley

1/2 Cup Shredded Parm

2 Eggs

Salt, Pepper

1 teaspoon Cumin

1 TB flour

Mix all in a bowl. Spoon into a mini muffin pan, filling to the top.

Bake for 20-30 minutes at 350 degrees until cooked all the way through.
