Shrimp and Veggie Laksa

I saw a picture of this dish floating around on pinterest and I just had to make it.

Ingredients:

1 Can Coconut Milk

some Udon or other asian noodles

Zucchini, Carrot, Red Pepper – chopped into slices

Thai Curry Paste,  2 oz or roughly 2-3 tablespoons

Shrimp [optional] you can totally go veg on this one

Fresh Basil

1. Chop up the veggies, while the Curry Paste loosens over some olive oil in a pot on medium heat for at least 30 seconds.

2. Pour the coconut oil over the paste and stir, bringing to a boil and then simmer. Add the veggies and cook them to desired texture.

3. Make noodles in their own pot. You will plate them separately. You don’t mix them in with the broth.

4. Spoon out broth and veggies. Top with noddles and fresh basil.
