Baked Mochi with Agave

A serious OMG. I have found my new favorite sweets. I love those mochi ice cream balls from trader joes, and wanted to experiment with mochi as a new healthy ingredient in baking [minus the ice cream]. I bought a sheet of mochi from whole foods, and followed the directions on the package, having no idea how they’d turn out. You cut them up into 1″ squares and bake for 8 minutes and they puff up like little rise crispies [probably because they’re made from rice]. I drizzled some agave on them, and they are delicious. Next time I will experiment with fruit and/or chocolate.
