Homemade Pasta

Homemade Pasta is so easy to make! With only four ingredients, I wonder why I’ve never done this before.

1 1/2 Cups Flour

2 Eggs

1/2 Teaspoon Salt

1 1/2 Tablespoon Water

Start by mixing the flour and salt together in a bowl.

Then, pour out the flour on a clean surface, make a well and drop in the eggs.

To make the dough, start by taking a fork and pulling the sides of the flour over the eggs, slowly forming a dough. Add water as needed, and the less the better, but I used the entire 1 1/2 Tablespoons, and probably added an additional 1/2 tablespoon.

So the next part is what takes some time. Once a ball is formed, cut into four pieces, cover and then let rest for 1 hour. Once it has rested, roll out the dough with plenty of flour as thin as you can. Mine was a little thick and turned out fine, but it would be better to be very very thin, almost translucent if you can get it that way. Cut into strips, and then let rest in clusters for another 20 minutes.

To cook:

Boil pasta in hot water for 4-5 Minutes until it floats. I did it for 4 minutes and it was almost overcooked. And also be careful, the noddles are very delicate. I covered my pasta with sauteed mushrooms, green onion and goat cheese.
