This was an impromptu meal that came about from a bunch of leftovers and things that needed to be used up.
Jumbo Pasta Shells
Zucchini
Peppers
Onion
Taco Seasoning [i make homemade based on this recipe]
Cilantro
Shrimp [precooked, chopped]
Ricotta
top with:
Cheddar Cheese
Salsa
Sour Cream
Green Onion
What to do:
Cook pasta shells.
Saute chopped peppers, onion, cilantro, shrimp and zucchini on the stove. Once everything is soft, mix in the taco seasoning and ricotta. You can also use cream cheese, but I didn’t have any. So ricotta is was.
Layer the bottom of the baking dish with salsa.
Fill each shell with the cheese and veggie mixture and bake in the oven for 30 minutes. Take out, top with cheese, sour cream, green onion and taco sauce or seasoning. Serve.
